I had the best tempeh tacos at The Natural Cafe, while visiting Santa Barbara this past summer and I have thinking about them ever since. Since it has been so cold and rainy in San Francisco, I wanted to bring back memories of being warm in the Santa Barbara sun...and of course those amazing tempeh tacos! This was my first attempt and they turned out pretty darn close to the real thing! I just sauteed the tempeh with a taco seasoning packet, some water, and red salsa. I choose the standard lettuce and cheddar topping for my tacos. I think these are going to be my new staple for dinner-so good!
